Drop Meat Balls and Pasta


Meatballs (drop with sauce)

Meatballs
22 saltine crackers
1 Cup milk

1 lb ground beef
1 lb ground pork
2 ounces (1 cup) grated parmesan cheese
1 t garlic powder
1 t oregano
1 t salt
½ t pepper
(also if wanted thyme, basil etc to the meatballs) … this helps the taste
Saltines in zip-lock bag and<b> crush </font></b>with rolling pin
Mix crackers with milk and let stand 5 minutes then mash with fork to form a paste
Mix meat and remaining meatball ingredients in a bowl
Moisten hands and form about 24 meatballs (1/4 cup or less each)
Cover and refrigerate until ready to cook with sauce

Sauce
¼ cup olive oil and butter combined
1 onion diced (you can use two if you want)
(2-3 diced carrots diced fine optional) do this
(2 celery stalks diced fine optional) do this
10 cloves garlic peeled and smashed
½ t red pepper flakes (if you like it spicier add up to 1 t)
2 cans (28 oz) of crushed tomatoes
Salt and pepper

(can add other spices if wanted) so this is where you can put in about) 1 t (small t is teaspoon, large T is tablespoon) each of dried Basil, Oregano, thyme, Italian seasoning into the sauce)
Heat oil and butter over medium heat add onions (and carrots and celery) and cook until soft remove and set aside add additional oil / butter if needed (cook these in a bit of salt and pepper and at the end incorporate those other spices from above
Add garlic and heat until golden brown about 10 minutes
Add pepper flakes and cook for 1 minute add back in onion mix
Stir in tomatoes
1 cup red wine (pro tip drink the rest while cooking)
stir and add
meatballs nestled in sauce
cover and cook in oven for 1 ½ hours or at 350 for 2 ½ to 3 hours at 275 (you can adjust the timing based on oven temp… I think the lower heat and longer cooking time is a help)
after the first hour and then once every 45 minutes are so open and stir gently,
toward the end taste and adjusts spices as needed with additional salt and pepper and up to1 t of oregano, thyme, basil
cool uncovered for 15 minutes
serve over pasta sprinkle over fresh basil and parmesan cheese
