Texas Chili


Texas Chili Ingredients

In a very large heavy pot (heavy cast is a good choice)
1 pound ground beef
1 pound ground pork
Brown beef and pork in a bit of oil at medium to medium high then drain and sit aside

3 links andouille sausage – coin sliced
1 package kielbasa sausage – coin sliced
Cook andouille and kielbasa for a few minutes remove and sit aside

2 large onions – chopped (somewhat course)
2-4 jalapeno peppers - diced
2 serrano peppers – diced
Cook at medium high in some oil and unsalted butter (unsalted doesn’t get scorched as bad at higher heats) until slightly brown and softened about 10 minutes or so then add
6 cloves garlic – thin sliced or crushed if you’d rather
And cook on medium to medium high for a few minutes more then add roasted peppers to warm

2 yellow chili peppers – diced
1 poblano pepper – diced
2 Anaheim peppers – diced
Roast these first (on the grill works well fairly high heat about 5 minutes per side until blackened, place in a plastic bag to steam for about 10 minutes, remove the skin) (if you don’t wish to do this add a couple of cans of diced green chilies) (also hatch chilies in season are great roasted in this)

Return all meat to the onions and peppers along with
2 tablespoons chili powder
2 teaspoons New Mexico Anaheim chili powder (or your favorite like Chipotle or Ancho)
1 ½ teaspoons ground cumin
1 teaspoon adobo powder
(no big deal if you don’t have this you can make it be using the following – 1/4 teaspoons of onion powder, garlic powder, cayenne pepper)
1 teaspoon whole coriander – crushed
½ teaspoon yellow mustard seed – crushed
2 teaspoon Mexican oregano flakes
1 tablespoon salt
2 teaspoons ground pepper
Mix well and cook for a few minutes then add

1 large can whole tomatoes – chopped
1 can Rotel tomatoes
1 cup water

Heat to boiling then cover, reduce to simmer and cook for about an hour (check the taste adjust if necessary)
then add
1 can red kidney beans – drained
1 can pinto beans – drained
You may need to add a bit more water depending on the consistency and add

1 cup Minute Rice
Cook for another hour

Serve with Fritos, chopped onion, chopped pickles, grated cheese and tortillas if you wish
