 First one I thought of because of the language. If they tried it couldn't be nearly as funny as the original.

 Movie called Harlem Nights with Eddie Murphy , Red Foxx, Richard Pryor, Della Reece. Funniest movie I ever seen and with all the political correctness B.S now it would never be remade

 Monty Python - Pretty much any of them. They are true classics and cannot be redone. At least in my opinion... Especially Holy Grail or Life of Brian..

 I agree, the lack of originality is appalling, as I mentioned in my post Not So Finest Hours for screenwriters.

Great answers so far as to what cannot (or should not) be remade.

I'll add Ferris Bueller's Day Off, Fast Times at Ridgemont High, Apocalypse Now, Heaven's Gate, Ishtar and UHF.
